Your choice of meat or seafood arrives seared and sizzling, sitting atop a square, inch-thick piece of volcanic granite, heated to 755 degrees. Your server shows you how to slice and cook it and tells you how long the pieces need to sear — as quickly as a minute — before reaching your preferred doneness.
All this happens due to the properties of the lava rock that is a poor conductor of heat (meaning it tends to hold heat inside rather than release it quickly) so it makes an excellent cooking stone. We heat the lava stones to a temperature of 755 degrees Fahrenheit, so that we can serve the entrees at the restaurant table bursting with aroma, seared and sizzling! The extreme heat seals in juices for a tender, flavorful and healthy preparation done exactly to your liking (since you have complete control over the whole process) and every bite can be as done as you choose.
